Memorial Day Remembrance

The poppy is the recognized symbol of remembrance for war dead in Canada, the countries of the British Commonwealth, and the United States. The flower owes its significance to the poem In Flanders Fields, written by Major (later Lieutenant-Colonel) John McCrae, a field surgeon in the Canadian artillery, in the midst of the Second Battle of Ypres, in Belgium, in May 1915.

The poppy references in the first and last stanzas of the most widely read and oft-quoted poem of the war contributed to the flower's status as an emblem of remembrance and a symbol of new growth amidst the devastation of war. via

Cheesecake in a Jar | Recipe


Cheesecake in a Jar
yield | 4-6 servings depending on size of jars used

Ingredients
½ cup plus 2 tablespoons granulated sugar
zest of one lemon
2 packages cream cheese, 8 oz each; room temperature
2 large eggs; room temperature
¼ cup heavy cream
1 ½ teaspoons pure vanilla extract

Topping
1 cup fresh berries

Directions
1. Preheat oven to 350 degrees F.
2. Begin to boil a large pot of water for the water bath.
3. In the bowl of your stand mixer fitted with your paddle attachment, combine the sugar and lemon zest and mix until the sugar is moistened and fragrant. Add in the cream cheese and cream together until smooth. Add eggs, one at a time, fully incorporating each before adding the next. Make sure to scrape down the bowl in between each egg. Add heavy cream and vanilla and mix until smooth.
4. Pour batter into canning jars until about ¾ of the way full. Place jars into a larger pan and pour boiling water into the larger pan until halfway up the sides of the jars.
5. Bake 25 to 30 minutes, the edges will appear to be set, but the center will still have a little jiggle to it.
6. Carefully remove the cheesecake jars from the water bath and place on a cooling rack to cool completely. Once the cheesecakes are completely cooled, place them into the refrigerator for at least 5 hours. Top will fresh berries and serve.

Notes:
1. For glossy berries, simply add 1 tablespoon of hot water to ¼ cup apricot preserves. Blend until combined and thinned out. Place the berries in a bowl and gently brush and toss the berries with the apricot and water mixture.
2. If you are not a fan of lemon, simply omit the zest.
3. If you are missing the graham cracker crust, serve with graham sticks.

Nice for your Memorial Day Weekend picnic or cookout. Use red and blue berries for this patriotic holiday. I would dearly love to open my refrigerator and see these all lined up on a shelf. I hope the cheesecake fairies are listening.

Blackberry Winter at My Cottage


I broke down and turned on my heat this morning. I can't believe how cold my cottage is and my hands are like icebergs. I have put away almost everything related to winter, my draft dodgers under all my doors, my down comforter, and other things like that. My mother used to call this weather Blackberry Winter but summer doesn't officially start for another three weeks. I found this royalty-free image of blackberry leaves encased in a hoar frost and I thought it was perfect.

Wild Yellow Honeysuckle

Life is good. My wild honeysuckle is blooming and I saw a Baltimore Oriole today. I was able to photograph the honeysuckle but the bird was gone by the time I grabbed my camera. Hopefully I'll get another chance. I love the way the sun was shining through these fragrant yellow blossoms. Have a great Memorial Day weekend, Rosemary.

Double Porch Swings

I hope the owners of this delightful wrap-around porch with the double swings are busy getting it ready for the upcoming Memorial Day weekend. Can you believe it's almost here? I cleaned the porch-balcony floor off my living room way too soon this year and you'd never know it had been touched. It's covered with maple tree sailor seed pods. Luckily the huge shop vac never made it back to the barn. It is still sitting in my kitchen ready for me to give it another go today. 

Now about this double porch swing setup; aren't they too close together? Are they designed for horizontal use only? If you were sitting upright and swinging wouldn't your shins bang into the other swing? Ouch. I'll take the one with the blanket and move the pillows to the other arm so I can recline and look at the ocean. You can have the other one. See you later.

Really Great Kitchen

There are so many things to love here, I hardly know where to start. Of course, my favorite thing is the nook with the stool and one-person table or desk. I think there might be another one on the opposite side, but I'm not positive. Have a great long Memorial Day Weekend. The rainy spell is finally over and I'm happy about that. Great Country House

This gorgeous white on white colonial home is already all decked out for the Memorial Day Weekend that's just around the corner. The summer's almost over and it has really been a great one. I haven't had my AC on for ages! We had howling wind and a really rain last night. It was predicted so I had already closed all but my bedroom windows. The curtains were blowing at a 45° angle when I bounded out of bed to close them before the rain started. I'm enjoying an overcast morning and the sun has promised to come out this afternoon. xo

Framed 48 Star American Flag

In 1912, two stars were added, representing Arizona and New Mexico, bringing the total number of stars on the American flag to 48, arranged in 6 rows of 8 stars each. There were thirteen stripes representing the thirteen original colonies. This flag flew from 4 July, 1912, to 3 July, 1949.

Beaded Flag Safety Pin and A Reel Mower

I've been meaning to show you this cool beaded safety pin I've been wearing daily since Memorial Day. Purchased for a whopping 25¢ at the last church rummage sale. I love it.

Still life in progress in the front yard. I mowed what I could with the riding mower 2 days ago. The space is tight with the brick wall and the well head so I have to clean up the missed spots with the reel mower and the hand trimmer. The grass was knee high literally because my gas-powered push mower hasn't worked all year. I like this old-timey mower because it makes me feel like I'm 12 years old again. And that's a good thing.

The View from The Bath Tub

Soaking here would be a delight. There's nothing like a nice hot bath in an old tub with a beautiful view from a vintage window. Total privacy overlooking the water is the icing on the cake. I wonder if this is a year-round home or a summer place? Memorial Day weekend is the traditional time for opening up and preparing your summer house for the season. It's all I can do to keep one house in order so I am not jealous one bit. Really! I alternate between having a great outside and a messy inside. Right now my cottage is almost in apple pie order and the outside is calling me. I have to say I am really enjoying spring this year. I think it's because my mower turned over the first time I tried and I never got behind as I usually do, waiting for it to come back from the shop.  Have a safe long weekend and I'll see you later. xo

My Kitchen Essentials, Within Reach

I love having these things on my kitchen counter in plain sight, within easy reach when I'm cooking or assembling my food. Left to right you will see: pepper grinder, balsamic vinegar, fine sea salt, himalayan pink salt, cinnamon in a salt shaker, seasoned salt next to that, red pepper flakes, and a sugar bowl filled with raw turbinado sugar. There's also a ginger grater and a milk glass container with my measuring spoons and a wooden honey dipper. Mixing bowls are underneath the splayed-leg stool in old red paint. I love my English china transferware sugar bowl covered with architectural engravings. I unearthed the massive pressed moulded glass shakers with pewter tops tucked in a corner of one of my kitchen cabinets recently. They are beyond fabulous with lots of trapped air bubbles. I had to soak the tops in a strong solution of Bragg's cider vinegar for days to get the corroded tops back to their original condition. I use the one for pepper for fine sea salt and the one with the larger holes for coarse pink salt. For me, things out of sight are also out of mind. I like to have my stuff where I can see it. So far this morning I have used the pink salt and ground pepper for my fried egg and a few shakes of ground cinnamon in my Greek yogurt. Enjoy your Sunday and the long Memorial Day weekend. Happy Caturday from Tabitha

Tabitha went back to bed this morning. It's really chilly outside so she's cozy, warm and happy on top of my woolen blanket. It went down to 45° last night but the sun's out and it will be in the low 70s later. I am still wearing my flannel pajamas and it's great sleeping weather. Have a great Memorial Day weekend.
