Pies with Fancy Top Crust

King Arthur Flour has a great article about fancy Pie Crusts:
It's that time of year with Thanksgiving a week away.
Maybe you will get an idea or two and try one!

Such a pretty pie! I'm always a bit afraid of making piecrust. My mother had "the touch" when it came to making delicious piecrust. I'm pretty sure it's a matter of practice making perfect (or almost perfect). As of now, I'm not sure if I'll try to make my own crust or rely on my good friends at Pillsbury who make that rolled up crust in the refrigerator section. Thanks for this link, Rosemary. It really has lots of good info!

Pam -- I have never mastered pie crust either. I saw those rolled Pillsbury crusts at the supermarket for the first time on Tuesday. Thanks for the recommendation. xo, Rosemary

Oh...I love your fancy pie posts, Rosemary! My late mother was a master pie maker. Although I was fortunate to receive some tutorials from her, I was always a single professional woman, so I never really refined my skills on the gentle art of domesticity. As Pam said, I believe it is a matter of having a wonderful teacher, and practice!

Lisa D. -- I never mastered pie crust either. My mother was a master baker but that's because she made the desserts for the family from a young age. When she left home for nursing school my grandfather said, "Who's going to make the pies and cakes?" My aunt Elizabeth took over that job until she too went to nursing school and then the good desserts at home ended because my Aunt Margaret wasn't a cook. I am happy with frozen pie crusts and farmer's market pies so I don't find my lack of skills in this department to be a huge problem. Your skills in other departments must override your pie making too. xo, Rosemary
