Easter Egg Evolution




Friends dropped off an Easter Basket for me yesterday with candy and two dyed eggs. Yummy breakfast this morning and lunch too. I like my egg salad with only 3 ingredients: mayonnaise, salt and pepper.

I love eggs and egg salad. I pretty much use the same ingredients that you do to make it except I use celery salt instead of regular salt. I was going to dye eggs with two of my grandsons this year but we didn't get around to it because my life has been crazzzzzy busy.

Have you ever tried a 1/4 tsp regular mustard and the juice of half a lime on your egg salad? I used to eat it the same as you but those two ingredients elevate the taste. I also throw in some chives from the garden when I have them.
