Potatoes for Saturday Supper

 
This is all we had for supper tonight. I left the skins on, cut them in half, and roasted these potatoes on top of the stove instead of baking them in the oven. They were delicious. We had a healthy quinoa salad with black beans and corn for lunch so these potatoes served with a little butter and sour cream were all we needed for the evening meal. 
I can't begin count the number of times I opened and closed the windows today and wiped off the window sills. We had so many short but heavy showers. It's a lot cooler too.

Nothing like a simple, filling meal. Does roasting on the stove mean in a covered pot? Do you add any water or oil?

I love potatoes, these look delicious. We had smashed potatoes with our grilled pork chops this evening. We had rain on Thursday morning, but it's been humid and warm today.

I used a cast iron pot. I have two lids. One fits perfectly with no steam vent and the other is loose but has a vent.
I started out with the first one to 'steam' the potatoes. I had a small amount of olive oil in the bottom of the pan.
I flipped them occasionally. When they were looking half way cooked, I switched lids so the liquid could evaporate.
At the end I took off the lid so they could get a little crusty. They were delicious. I bought one of those huge bags of
large baking potatoes at Costco a couple of weeks ago and we must use them. I am going to make a large batch of twice baked
potatoes for the freezer next week.

We love quinoa hot or cold. It is a wonderful 'super food'. I also put carrots in the salad along with the black beans and corn. It was delicious and the carrots gave it a nice crunch.

We got a cool front overnight and it is very refreshing. I need to work outside for a change.

I would be so happy with this simple meal but the terrific guy that I live with would wonder where the rest of dinner was. Your potatoes look to be cooked to perfection....I'm wiping the drool off of my chin right now.
