Tonight's Dinner


This is what I had for dinner. There were three leftover salmon croquettes in the refrigerator that I sliced in half and reheated in a little olive oil. I cut a large red bell pepper in half and spread it with red pepper hummus. Delish. My mom enjoyed hers too. Cleanup was a snap. We had homemade brownie ice cream sandwiches for dessert. Ground Hog Day is over now and I can do as I please until bedtime.

Goodness me, my girl, aren't you from Georgia? Those are salmon PATTIES!! And they sure look good to me, I wouldn't mind having them as leftovers!

Juniper...My dishes were done and put away in no time. It was great. Easy suppers are the rule in the summer.

Kay....Yes...I'm a Georgia girl but for some reason we always called these patties croquettes in my family. I must be from the French part of Georgia :-)

somehow in reading the archives i missed your background. i've been thinking of you as new england born and bred.
i love salmon patty-croquettes!
funny. in our house my mother called them croquettes too. only they were kind of cone shaped.
but so delicious! even stone cold!
my father was a texan. my mother from new york. i don't know what i am! a pioneer yankee i guess! lol.

Tammy...I'm both. We moved to Pennsylvania when I was in 4th grade and lived there until 9th grade when we moved to South Carolina. I moved back to the northeast in 1972 and I love my area. Some people think I still have a slight southern accent. My mother never lost hers. xo, Rosemary

Looks good to me. Anytime it's food that doesn't require a ton of work on a warm summer day, perfect. My friend has these dishes.
