Creamy Lemon Popsicles [Recipe]

Creamy Lemon Popsicles Recipe
(Adapted from Whipped)
1/2 cup sugar
1/4 cup fresh lemon juice
2 Tbsp. grated lemon peel
pinch of salt
1 1/4 cups buttermilk

Whisk sugar, lemon juice, lemon peel, and salt in a large bowl until sugar dissolves. Whisk in buttermilk.
Divide mixture among popsicle molds. Cover and freeze until firm, at least 4 hours and up to 5 days.
I can't wait to make these. I don't have any lemons or buttermilk on hand right or I would already be whipping these up. This is the best recipe I have found so far calling for the least amount of sugar. Don't they sound good? 

My ice cold watermelon will have to do for my July 4th treat later. Have a great holiday. xo

Rosemary, I'm in "Beach Recovery Mode"....had a blast. The party continues today. We started early with a church flag raising ceremony and breakfast. Next up, family picnic and then fireworks and ice cream. I love foods made with lemon unfortunately they don't love me. Those pops look really good though. Happy Independence Day to you and Webster.

I hope you will simply putter today. Take a break and enjoy some "feet up time" on the porch with your mom, enjoying chilled watermelon slices.

Our granddaughters had to leave yesterday but Saturday we spent putting together "Josie", our scarecrow lady and entry for the county fair in August. Never had I spent such happy, productive hours. They are city girls so it was nice to enjoy the simple pleasures of life.

Rosemary, I shall make these popsicles. Not today. But soon. I currently am baking a big batch of Queen V's Ginger Cookies to take to a cookout.
